  • - Fresh Asian Coriander Bunch
  • 400 Ml Ktc Coconut Milk 400Ml
  • 100G Ginger 100G
  • 250G Garlic 250g
  • 100G Green Chillies - 100g

  • 100 G Trs Ground Cumin Jeera Powder
  • 750 G Top-Op Table Salt Drums
  • 100G Natco Kashmiri Chilli Powder, 100G

Instructions

  1. Heat 2 tablespoons of cooking oil in a pan over medium heat. Add 1 tablespoon of butter for enhanced flavor. Once the butter melts, sauté the chopped onions until they turn golden brown, stirring occasionally.
  2. Add 1 teaspoon of turmeric powder, 1 teaspoon of Kashmiri chilli powder, 1 teaspoon of ground cumin, and 1 teaspoon of ground coriander to the onions. Stir and cook for 1-2 minutes to allow the spices to bloom and release their flavors.
  3. Add the spaghetti in tomato sauce to the pan. Cook until the sauce thickens slightly, stirring occasionally to combine the flavors and create a rich base.
  4. Add your choice of mixed vegetables (if using) and stir well to coat them with the spice mixture. Cook for 2-3 minutes to allow the vegetables to absorb the flavors.
  5. Pour in 1 cup of coconut milk (if using) and add kokum pieces (optional, if available). Stir to combine all the ingredients evenly and create a creamy curry base.
  6. Bring the curry to a gentle simmer and let it cook for 10-15 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking and ensure even cooking.
  7. Taste the curry and adjust the seasoning with salt as needed. Garnish with freshly chopped cilantro.
  8. Serve the kokum vegetable curry hot with rice or bread. Feel free to adjust the spice levels and vegetables according to your preference.
