A warm and comforting Indian-inspired cauliflower soup, infused with aromatic spices and perfect for a wholesome dinner. This vegetarian dish is creamy, flavorful, and easy to prepare.
Ingredients
- 1 Bunch Spring Onions 1 Bunch
- - Thyme Bunched Herb
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- 1 stick Organic Celery Stick
- 500 G Jack'S Cauliflower Florets
- 250G Holland & Barrett Nutritional Yeast Flakes
- 100G Trs Whole Black Pepper 100G
- 125G Daylesford Organic Brandy Butter
- 750 Ml Bevelini Extra Virgin Olive Oil, 750Ml
- - Jalpur Curry Powder
- - Tata Salt
- - Natco Ground Nutmeg
- 50G Pepper Black Ground BWFO
- - Jalpur Coriander Powder Dhana Powder
Instructions
- 1. In a heavy soup pot, melt 2 tablespoons of brandy butter over medium heat.
- 2. Add 1 tablespoon of olive oil, then sauté 1 finely chopped onion and 1/2 cup of finely chopped spring onions until softened, about 3-4 minutes.
- 3. Stir in 1 minced clove of garlic, 2 chopped celery sticks, and 500 g of cauliflower florets. Cook for 5 minutes, stirring occasionally.
- 4. Add 1/2 teaspoon of curry powder, 1/2 teaspoon of thyme, 1/2 teaspoon of salt, and 1/2 teaspoon of coriander powder. Mix well to coat the vegetables with the spices.
- 5. Pour in 6 cups of water and stir in 2 tablespoons of nutritional yeast flakes. Bring the mixture to a boil.
- 6. Reduce the heat to medium, cover the pot, and simmer for 15 minutes or until the cauliflower is tender.
- 7. Remove the pot from heat and let the soup cool slightly. Blend the soup in batches until smooth and creamy.
- 8. Return the soup to the pot and reheat gently. Stir in 1/8 teaspoon of ground nutmeg and 1/8 teaspoon of freshly ground black pepper before serving.
