Instructions
- 1. Pour 1 liter of vegetable broth into a 4-quart pot and bring it to a gentle simmer over medium heat.
- 2. Add 2 cups of diced tomatoes and 1 lb of mixed vegetables such as green beans, peas, and bell peppers to the pot.
- 3. Stir in 1/2 tsp of hing (asafoetida) and 1 tsp of salt for seasoning. Let the mixture cook for about 15 minutes until the vegetables are tender.
