Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
  2. 2. In a large mixing bowl, combine 450 g grated cheddar, 450 g softened butter, and 1/2 tsp cumin. Mix until smooth and well combined.
  3. 3. Gradually add 5 1/2 cups of semolina flour, one cup at a time, mixing thoroughly after each addition to form a soft dough.

  5. 5. Transfer the dough to a piping bag fitted with a star nozzle or shape into thin sticks by hand.
  6. 6. Pipe or shape the dough into long, thin straws directly onto the prepared baking sheets, leaving some space between each.
  7. 7. Bake in the preheated oven for 10-12 minutes, or until the cheese sticks are set and lightly golden.
  8. 8. Allow the cheese sticks to cool slightly on the baking sheets before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
