  • - Rajah Jeera Whole Cumin Seeds
  • 250G Fresh Green Raw Mangoes 250G
  • 120G Natoora Root Ginger
  • - Natco Kala Namak Indian Black Salt
  • - Jalpur Fennel Seeds Whole
  • - Jalpur Green Cardamoms Whole
  • 100G East End Black Pepper Whole

Instructions

  1. 1. Peel and cut 250g of raw mango into small pieces.
  2. 2. Boil the mango pieces in about a cup of water until they become soft and pulpy.
  3. 3. Once the mangoes are cooked, let them cool down. Then, blend them to form a smooth puree.
  4. 4. In a pan, dry roast a teaspoon of cumin seeds and a teaspoon of fennel seeds until aromatic, then grind them into a fine powder.
  5. 5. Add the mango puree to a large bowl. Mix in the roasted cumin and fennel powder.
  6. 6. Crush a small piece of ginger and a few black peppercorns, then add them to the mango mixture.
  7. 7. Add a pinch of black salt, a few crushed green cardamom pods, and finely chopped half of a fresh green chilli to the mixture.
  8. 8. Squeeze the juice of two limes into the mixture and stir well to combine all the flavors.
  9. 9. Dilute the mixture with water to achieve desired consistency and adjust sweetness or salt as per taste.
  10. 10. Chill the Aam Panna in the refrigerator, then serve over ice cubes for a refreshing drink.
