  • 250G Natco Pistachio Kernels, 250G

Instructions

  1. 1. Dry roast 1/4 cup flaked almonds, 1/4 cup cashews, and 1/4 cup walnuts in a pan on low heat for 3-4 minutes until aromatic. Let them cool completely.
  2. 2. In the same pan, lightly toast 1/4 cup pistachio kernels for 2 minutes. Remove and set aside to cool.
  3. 3. Add 1/2 cup pitted dates and 1/4 cup dried figs to a blender. Blend until they form a sticky paste.
  4. 4. Coarsely chop the roasted flaked almonds, cashews, walnuts, and pistachio kernels, or pulse them in a blender for a few seconds. Ensure they remain chunky for texture.
  5. 5. In a mixing bowl, combine the chopped nuts and the date-fig paste. Add 2 tbsp of desiccated coconut and 1/4 tsp cardamom powder. Mix well using your hands until the mixture binds together.
  6. 6. Grease your palms with a few drops of ghee and take small portions of the mixture. Shape each portion into a round laddoo.
  7. 7. Roll the laddoos in additional desiccated coconut for coating (optional). Store in an airtight container or serve immediately.
