Ingredients

  • 15G Fresh Curry Leaves - Approx 15G
  • 100G Greenfields Brown Mustard Seeds, 100G
  • 1.5 Kg Natco Fine Semolina, 1.5Kg
  • 4 Pack Fresh Carrots - Pack Of 4
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1kg 1kg Green Pepper
  • 280G The Tofoo Co Naked Organic Extra Firm Tofu
  • 100 G Saras Turmeric Haldi Powder
  • 1 L Crisp N Dry Oil
  • 100G Natco Kashmiri Chilli Powder, 100G

Instructions

  1. 1. In a mixing bowl, combine semolina with water to form a thick paste. Let the mixture rest for 10 minutes to allow the semolina to hydrate.
  2. 2. While the semolina is resting, finely chop the onion, green pepper, and tofu. Grate a portion of the carrot pickle to add a tangy flavor. Set these aside.
  3. 3. Once the semolina has rested, add the chopped onion, green pepper, tofu, and grated carrot pickle to the semolina mixture. Season with Kashmiri Chilli Powder, turmeric powder, and salt to taste. Gradually add water to achieve a thick, pourable batter consistency.
  4. 4. Heat a frying pan over medium heat and add a tablespoon of cooking oil. Once hot, add brown mustard seeds and a few curry leaves. Let them splutter for a few seconds, then pour this tempering into the batter and mix well.
  5. 5. Just before cooking, add fruit salt to the batter and mix gently to incorporate air, ensuring the batter becomes light and fluffy.
  6. 6. Heat a non-stick pan or dosa tawa over medium heat and lightly grease it with cooking oil. Pour a ladleful of batter onto the pan and spread it slightly to form a thick dosa. Cook until the bottom is golden brown, then flip and cook the other side until done. Repeat with the remaining batter.
  7. 7. Serve the hot Bun Dosas with carrot pickle on the side or your choice of chutney for a flavorful meal.
