Ingredients
- - Beef Topside Steak (1 Kg) Thin
- 1kg 1kg Green Pepper
- 2 Per Pack Natoora White Onions
- - Potts Beef Stock Can
- - Anchor Salted Butter 200g
Instructions
- 1. Peel and finely slice the spring onions and green peppers. Set them aside for later use.
- 2. In a large pot, melt 50g of Anchor Salted Butter over medium heat. Once melted, add the sliced spring onions and green peppers. Sauté for 5-7 minutes until softened.
- 3. Add the thyme bunched herb to the pot and stir for 1-2 minutes to release its aroma.
- 4. Season the mixture with a pinch of Natco Kala Namak Indian Black Salt, adjusting to taste. Stir well to combine.
- 5. In a separate pan, heat a small amount of butter and sear the Beef Topside Steak (1 kg) thin slices over high heat for 2-3 minutes on each side until browned. Remove from heat and set aside.
- 6. Add 1 liter of water or beef stock to the pot with the sautéed vegetables and bring to a boil. Reduce the heat and let it simmer for 20-25 minutes to allow the flavors to meld together.
- 7. While the soup simmers, tear the Gioiella Apulian Burrata Soft Cheese into small pieces and set aside for garnishing.
- 8. Once the soup is ready, remove the thyme sprigs and blend the soup using an immersion blender until smooth. Adjust the seasoning with additional Kala Namak if needed.
- 9. To serve, ladle the soup into bowls, top with slices of the seared beef, and garnish with the torn Gioiella Apulian Burrata Soft Cheese. Optionally, sprinkle with additional thyme leaves for extra flavor.
