Ingredients
- - Weikfield Date & Tamarind Chutney
- 2 Kg Albert Bartlett Butter Gold Potatoes
- 1 L Ktc Sunflower Oil
- 110G Gourmet Kitchen Himalayan Pink Salt Grinder
Instructions
- Preheat the oven to 200°C (fan 180°C) and line a baking tray with parchment paper.
- Pour leek and potato soup into a saucepan and heat it gently over medium heat, stirring occasionally, until it thickens slightly. This will help reduce the liquid content and make it easier to work with.
- Once the soup has thickened, transfer it to a shallow dish and allow it to cool completely. Cooling will help it set slightly, making it easier to handle.
- Once cooled, use a spoon to scoop small portions of the thickened soup and shape them into fry-like sticks. Place the shaped sticks onto a plate or tray lined with parchment paper.
- In a small bowl, mix 2 tablespoons of cooking oil with a pinch of pink salt. Brush this oil mixture lightly over the shaped fries to coat them evenly.
- Carefully transfer the shaped and oiled fries onto the prepared baking tray, ensuring they are arranged in a single layer and do not overlap.
- Place the tray in the preheated oven and bake for 15-20 minutes. After this time, carefully flip the fries using tongs or a spatula to ensure even cooking.
- Return the tray to the oven and bake for another 10-15 minutes, or until the fries are golden and crispy.
- Remove the tray from the oven and let the fries cool for 2-3 minutes.
- Transfer the fries to a serving plate and sprinkle them with a pinch of coriander leaf for added flavor and garnish.
- Serve the crispy fries immediately with a side of date and tamarind chutney for dipping.
