Instructions

  1. 1. In a medium saucepan, combine ketchup, brown sugar, bourbon, smoked paprika, and apple cider vinegar. Cook over medium heat for 8 minutes, stirring frequently, until the sauce thickens. Set aside.
  2. 2. Heat a skillet over medium heat and add the butter. Add the sliced onions and a pinch of salt. Cook for 12 minutes, stirring occasionally, until the onions are golden brown and caramelized. Set aside.
  3. 3. In a large mixing bowl, combine the ground beef, minced garlic, onion powder, smoked paprika, and bourbon. Season with salt and pepper, and gently mix until just combined. Do not overmix.
  4. 4. Divide the beef mixture into 4 equal portions and shape into patties, about 2 cm thick. Make a small indentation in the center of each patty to prevent it from puffing up during cooking.
  5. 5. Heat a grill or grill pan over medium-high heat. Lightly oil the grill grates or pan. Cook the burger patties for 4-5 minutes per side, or until they reach your desired level of doneness (internal temperature should be 70°C for well-done).
  6. 6. In the last 2 minutes of cooking, place a slice of cheddar cheese on each patty and cover the grill or pan to allow the cheese to melt.
  7. 7. Lightly toast the burger buns on the grill or in a toaster for about 1 minute.
  8. 8. Assemble the burgers: Spread a generous layer of the bourbon BBQ sauce on the bottom bun, place the patty with melted cheddar on top, add a spoonful of caramelized onions, and finish with lettuce. Top with the other half of the bun.
