Instructions

  1. 1. In a large mixing bowl, cream together 1 cup of softened butter and 1 cup of sugar until light and fluffy.
  2. 2. Mix in 1/2 cup of molasses and 1 teaspoon of vanilla extract until well combined.
  3. 3. In a separate bowl, whisk together 2 cups of whole wheat flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 2 teaspoons of ground ginger, and 1/2 teaspoon of ground cinnamon.
  4. 4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. 5. Chill the dough in the refrigerator until firm enough to handle, about 1-2 hours.
  6. 6. Roll the dough into logs about 1 1/2 inches in diameter, wrap them in wax paper, and refrigerate overnight.
  7. 7. Preheat the oven to 350°F (175°C). Slice the chilled dough into thin rounds and place them on an ungreased cookie sheet.
