Ingredients
- 200G The Jolly Hog 6 Smoked Dry Cured Back Bacon Rashers
- 1 stick Organic Celery Stick
- 324G Borough Broth Low Fodmap Chicken Bone Broth
- - Organic Dried Rosemary Hatton Hill Organic
- 750G Natco Almonds 750g
- - Krusteaz Honey Cornbread And Muffin Mix
- NaN Organic Golden Flaxseed Flour
Instructions
- 1. Preheat your oven to 350°F (175°C) and grease an 8 x 12-inch baking dish.
- 2. In a large skillet, cook 1/2 lb of bacon over medium heat until lightly browned. Drain off all but 2 tablespoons of the drippings.
- 3. Add 1 cup of chopped celery to the skillet. Cook until tender, about 5-7 minutes, then remove from heat.
- 4. In a large mixing bowl, combine the cooked celery mixture with 1/2 cup of sliced almonds and 1 package of cornbread stuffing mix.
- 5. In a separate bowl, combine 1/2 teaspoon of dried rosemary and 1 can of chicken broth. Pour this mixture over the stuffing mixture and stir until evenly combined.
- 6. Transfer the stuffing mixture to the prepared baking dish, spreading it out evenly. Cover the dish with foil and bake for 45 minutes.
- 7. Remove the foil and sprinkle the top with crispy fried onions. Return the dish to the oven and bake uncovered for an additional 5 minutes.
- 8. Remove from the oven and let the stuffing rest for 5 minutes before serving. Enjoy!
