Instructions

  1. 1. Heat a large pot or Dutch oven over medium heat and add the olive oil. Once hot, add the ground beef and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned and fully cooked. Drain any excess fat and set the beef aside.
  2. 2. In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. 3. Add the tomato paste to the pot and stir for 1-2 minutes to combine and enhance the flavor.
  4. 4. Pour in the beef stock and water, then add the diced tomatoes (with their juices), dried thyme, and bay leaf. Stir to combine and bring the mixture to a gentle boil.
  5. 5. Once boiling, reduce the heat to a simmer and return the cooked ground beef to the pot. Cover and let the soup simmer for 15 minutes, allowing the flavors to meld.
