Ingredients
- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 500G Mixed Nuts Chopped Bwfo
- 6 Each Golden Yolk Eggs 6 Pack
- 12G Dried Strawberries & Blackberries, 12G
- 500G Natco Unrefined Jaggery, 500G
- 200G Anchor Unsalted Butter
- 750 G Top-Op Table Salt Drums
- 100G Borwicks Baking Powder, 100G
- 1 Kg Doves Farm Gluten Free Plain White Flour, 1Kg
Instructions
- 1. Preheat your oven to 180°C (350°F) and grease a 6-inch round cake pan. Line the bottom with parchment paper.
- 2. In a small bowl, soak 1/4 cup of dried strawberries & blackberries in 2 tbsp of rum or orange juice for at least 30 minutes.
- 3. In another bowl, cream together 1/4 cup unsalted butter and 1/4 cup unrefined jaggery until light and fluffy.
- 4. Beat in 1 large egg and 1/2 tsp honey infused with vanilla pod until fully incorporated.
- 5. In a separate bowl, sift together 3/4 cup all-purpose flour, 1/2 tsp baking powder, 1/4 tsp baking soda, and a pinch of salt.
- 6. Gradually fold the dry ingredients into the wet mixture, alternating with 1/4 cup of milk, starting and ending with the dry ingredients.
- 7. Gently fold in the soaked dried strawberries & blackberries along with any remaining liquid and 2 tbsp of chopped nuts (like almonds or walnuts).
- 8. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- 9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- 10. Dust the cake with powdered sugar and garnish with fresh berries before serving.
