Instructions

  1. 1. Preheat your oven to 220°C (200°C fan) and line a baking tray with parchment paper for the zucchini fries.
  2. 2. Slice the zucchini into thin strips (about 1 cm thick) to resemble fries. Set them aside.
  3. 3. Prepare the breading for the zucchini fries: In one bowl, whisk 2 large eggs. In a second bowl, mix breadcrumbs, grated Parmesan, smoked paprika, garlic powder, salt, and black pepper.
  4. 4. Dip each zucchini strip into the beaten eggs, then coat thoroughly in the breadcrumb mixture. Place the breaded zucchini strips onto the prepared baking tray.
