Ingredients

  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
  • 6 Each Golden Yolk Eggs 6 Pack
  • 75G Tajin Guajillo Chilli, 75G
  • 1.5 Kg Best In Plain Flour 1.5 Kg
  • 100G Rajah Spices Ground Paprika Powder
  • 250 Ml Ktc Jasmin Oil Cooking Oil 250Ml

Instructions

  1. 1. Peel and trim the top of the brown onion, keeping the root intact. Cut into it to create petal-like wedges, without cutting through the root.
  2. 2. Gently separate the onion petals so they fan out and resemble a blooming flower.
  3. 3. In a mixing bowl, combine refined wheat flour, ground paprika powder, Guajillo chilli, and add a pinch of salt.
  4. 4. In another bowl, beat eggs with homogenised toned milk to form a smooth batter.
  5. 5. Dip the prepared onion into the flour mixture, ensuring all petals are coated. Shake off excess flour.
  6. 6. Dip the floured onion into the egg and milk batter, making sure it is thoroughly coated.
  7. 7. Remove the onion from the batter and shake off any excess. Return it to the flour mixture for a second coating.
  8. 8. Heat refined soybean oil in a large pot over medium-high heat to about 350°F (175°C).
  9. 9. Carefully place the onion into the hot oil, root side up, and fry until golden brown and crispy, about 5-7 minutes.
  10. 10. Carefully remove the Blooming Onion from the oil and place it on a paper towel-lined plate to drain excess oil.
  11. 11. Serve warm with your choice of dipping sauce.
