Instructions
- 1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with unsalted butter, then dust it lightly with plain flour to prevent sticking.
- 2. In a medium bowl, whisk together 2 1/2 cups of plain flour, 1 teaspoon of baking powder, 1/2 teaspoon of bicarbonate of soda, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of fine sea salt. Set aside.
- 3. In a large bowl, beat 200g of unsalted butter and 1 cup of brown cane sugar together using an electric mixer until light and fluffy, about 3-5 minutes. Add the eggs one at a time, beating well after each addition, then stir in 1 teaspoon of natural bourbon vanilla extract.
- 4. Gradually add the dry flour mixture to the wet butter mixture, alternating with 1 cup of buttermilk. Begin and end with the flour mixture, mixing just until combined after each addition to avoid overmixing.
- 5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Arrange thinly sliced apples and plums on top of the batter in a decorative pattern.
- 6. In a small bowl, mix 2 tablespoons of light brown soft sugar with 1/2 teaspoon of ground cinnamon. Sprinkle this mixture evenly over the arranged fruit.
- 7. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- 8. Let the cake cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely before serving.
