Instructions

  1. 1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with unsalted butter, then dust it lightly with plain flour to prevent sticking.
  2. 2. In a medium bowl, whisk together 2 1/2 cups of plain flour, 1 teaspoon of baking powder, 1/2 teaspoon of bicarbonate of soda, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of fine sea salt. Set aside.
  3. 3. In a large bowl, beat 200g of unsalted butter and 1 cup of brown cane sugar together using an electric mixer until light and fluffy, about 3-5 minutes. Add the eggs one at a time, beating well after each addition, then stir in 1 teaspoon of natural bourbon vanilla extract.
  4. 4. Gradually add the dry flour mixture to the wet butter mixture, alternating with 1 cup of buttermilk. Begin and end with the flour mixture, mixing just until combined after each addition to avoid overmixing.
  5. 5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Arrange thinly sliced apples and plums on top of the batter in a decorative pattern.
  6. 6. In a small bowl, mix 2 tablespoons of light brown soft sugar with 1/2 teaspoon of ground cinnamon. Sprinkle this mixture evenly over the arranged fruit.
  7. 7. Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
