Instructions
- 1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
- 2. Cook 1 shallot according to package directions and set aside.
- 3. Cook 300 g of spinach according to package directions, then drain thoroughly to remove excess moisture.
- 4. In a large mixing bowl, whisk together 1/2 cup flaxseed flour, 1 cup sour cream, 1/4 cup melted butter, and 1/4 teaspoon salt until smooth.
- 5. Stir the cooked shallot and drained spinach into the egg mixture, then gradually mix in 1 package (about 200 g) of polenta until just combined.
- 6. Pour the mixture into the prepared casserole dish and bake for 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean.
- 7. Sprinkle 1/2 cup crumbled feta cheese evenly over the top of the baked cornbread and return to the oven for 2 minutes, or until the cheese is melted.
- 8. Remove from the oven and let cool slightly before serving warm.
