- 2 Kg Albert Bartlett Butter Gold Potatoes

- 200 G Authentic Greek Yogurt

Instructions
- 1. Preheat the oven to 200°C (400°F).
- 2. Remove the skin from 500 g of chicken breasts and season them with salt, pepper, and your choice of herbs or spices.
- 3. Place the chicken breasts on a baking tray lined with parchment paper and bake for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).
- 4. While the chicken is baking, peel and chop 500 g of potatoes into small chunks. Boil them in a pot of water until tender, about 15 minutes.
- 5. Drain the potatoes and mash them with 100 ml of unsweetened almond milk and 50 g of Greek yogurt until smooth. Season with salt and pepper to taste.
- 6. Heat 200 ml of low-fat canned gravy in a saucepan over medium heat until warm.
- 7. Serve the baked chicken alongside the mashed potatoes, topped with the warm gravy. Pair with a side of steamed broccoli and rye bread for a complete meal.
