- 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
- - Thomas Ridley Fresh British Beef Mince
- 1 Kg Yellow/White Onion 1kg
- 1 Piece Red Bell Pepper, 1pcs | Gopuff
- 1 stick Organic Celery Stick
- 1 Kg Baby Potatoes 1kg
- 50G Pepper Black Ground BWFO
- - Schwartz Garlic Salt
Instructions
- 1. In a large skillet, brown 500 g of lean ground beef with 1 diced onion, 1 diced bell pepper, and 2 diced celery stalks over medium heat until the beef is fully cooked and the vegetables are softened, about 8-10 minutes.
- 2. Drain any excess fat from the beef mixture and set it aside.
- 3. In a large pot, combine 2 diced carrots, 2 diced potatoes, 2 cans of no-salt-added diced tomatoes, 2 cans of no-salt-added mixed vegetables, and 1 tsp garlic salt. Add enough water to cover the ingredients by about an inch.
- 4. Bring the mixture to a boil over high heat, then reduce the heat to low and simmer for 30 minutes, stirring occasionally.
- 5. Add the cooked beef mixture to the pot and continue to simmer for another 30 minutes, or until the potatoes are tender and the flavors are well combined.
- 6. Season the soup with 1 tsp black pepper to taste, stir well, and serve hot.
