  • 450G Pack'D Organic Super Sweet Sweetcorn
  • 50G Pepper Black Ground BWFO
  • 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
  • 100G Terre Exotique Winemaker'S Salt, 100G

Instructions

  1. 1. Chop 2 cups of carrots, 1 cup of celery, and 1 cup of onion into small pieces. Dice 2 medium zucchini and 1 red bell pepper.
  2. 2. In a 5-quart kettle, combine the chopped carrots, celery, onion, zucchini, and red bell pepper. Add enough water to cover the vegetables and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
  3. 3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
  4. 4. Add 1 cup of diced tomatoes and 1 cup of whole kernel corn to the kettle. Stir well and simmer for an additional 10 minutes to heat through.
  5. 5. Taste and adjust seasoning if needed. Serve the soup hot as a main course for dinner, optionally accompanied by a slice of whole-grain bread.
