- 1. In a bowl, whisk together 2 eggs, 1 tablespoon milk, 1/4 teaspoon salt, and a pinch of pepper until well combined.
- 2. Slice 4 tomatoes into 3/4-inch thick rounds and set aside.
- 3. Place 1 cup of crushed crackers in a shallow dish. Dip each tomato slice into the cracker crumbs, then into the egg mixture, and again into the cracker crumbs to ensure an even coating.
