- 6 Per Pack Clarence Court Leghorn Free Range White Assorted Eggs
- 250G Biona Organic Hi Oleic Dark Roast Smooth Peanut Butter
- 200G Anchor Unsalted Butter
- NaN Mcdougalls Plain Flour
- 500G Tate & Lyle Fairtrade Fondant Icing Sugar
Instructions
- 1. Grease 4 ramekins with unsalted butter and coat the insides with caster sugar to prevent sticking. Set aside.
- 2. Prepare the cake batter by creaming 100g of unsalted butter with 100g of caster sugar until light and fluffy. Gradually add 2 eggs and 50g of sifted flour, mixing until smooth.
- 3. Fill each prepared ramekin halfway with the cake batter. Add 2 tablespoons of peanut butter to the center of each ramekin, ensuring the peanut butter is surrounded by batter. Cover with more cake batter until the ramekin is about 3/4 full.
- 4. Preheat the air fryer to 180°C. Place the ramekins in the air fryer and cook for 10 minutes, or until the edges are set but the center remains slightly soft.
- 5. Allow the lava cakes to cool for 2-3 minutes before carefully removing them from the ramekins.
- 6. Dust the tops of the lava cakes with fondant icing sugar and serve warm.
