Instructions

  1. 1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. 2. Season the turkey breast with olive oil, salt, pepper, and paprika. Place it on the prepared baking tray and roast for 25-30 minutes, or until the internal temperature reaches 74°C (165°F). Remove from oven and let it rest for 5 minutes before slicing thinly.
  3. 3. While the turkey is cooking, prepare the honey mustard dressing. In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, salt, and pepper until smooth. Set aside.
  4. 4. Chop the romaine lettuce, cucumber, cherry tomatoes, red onion, and bell peppers into bite-sized pieces. Add them to a large salad bowl.
  5. 5. Slice the avocado and add it to the salad bowl along with the cooked turkey slices.
  6. 6. Drizzle the honey mustard dressing over the salad and toss gently to coat all ingredients evenly.
  7. 7. Sprinkle the salad with toasted sunflower seeds for added crunch and flavor.
  8. 8. Serve immediately, ensuring that each portion contains an even balance of turkey, veggies, and dressing.
