Ingredients
- 1 Head Organic Romaine Lettuce
- - Fresh Asian Coriander Bunch
- 1 Piece Cucumber 1Pc
- - The Tofoo Co. Naked Tofu
- - Filippo Berio Garlic Flavoured Olive Oil
- - Tariq Halal Pepper & Jack Cheese
- - Warburtons Sliced Sandwich Rolls
- 1 Kg Red Onion 1kg
- - Smokey Bbq Sauce
- - La Chinata Sweet Smoked Paprika
- 150 Ml Kikkoman Soy Sauce - Pouring Pot, 150Ml
- 100 G East End Garlic Powder
Instructions
- 1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- 2. Drain the tofu and press it to remove excess moisture. Cut the tofu into 1 cm thick slabs.
- 3. In a medium bowl, whisk together the BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, and soy sauce.
- 4. Coat the tofu slices evenly with the BBQ sauce mixture, ensuring all sides are covered. Place them on the prepared baking tray.
- 5. Bake the tofu in the preheated oven for 20 minutes, flipping halfway through to ensure even cooking.
- 6. While the tofu is baking, slice the pepper jack cheese into thin slices and set aside. Toast the sub rolls lightly for 3 minutes in the oven or on a grill pan for extra crunch.
- 7. Prepare the vegetables: thinly slice the red onion and cucumber, and shred the romaine lettuce.
- 8. Once the tofu is baked, remove it from the oven and layer each sub roll with shredded lettuce, cucumber slices, and red onion.
- 9. Add the baked BBQ tofu slices on top of the veggies, followed by the pepper jack cheese slices. Optionally, return the assembled subs to the oven for 2 minutes to melt the cheese slightly.
- 10. Serve immediately, optionally garnished with fresh coriander or additional BBQ sauce drizzle for extra flavor.
