Instructions
- 1. In a medium bowl, whisk together buttermilk, 1 tsp of salt, 1/2 tsp of pepper, and garlic powder. Add chicken strips, ensuring they're fully submerged, and marinate for at least 10 minutes while you prepare the other ingredients.
- 2. In a separate bowl, mix the flour, paprika, cayenne pepper, 1 tsp of salt, and 1/2 tsp of pepper to create the seasoned coating for the chicken.
- 3. Heat vegetable oil in a deep frying pan or skillet over medium heat until it reaches 175°C (350°F), about 5 minutes.
- 4. Remove the chicken strips from the buttermilk marinade, letting excess liquid drip off, and dredge them in the seasoned flour mixture, coating each piece thoroughly.
- 5. Fry the chicken strips in batches for 6-8 minutes, turning occasionally, until golden brown and cooked through. Use a digital thermometer to ensure the internal temperature reaches 75°C (165°F). Place cooked strips on a plate lined with kitchen paper to absorb excess oil.
- 6. In a small saucepan over low heat, melt the butter and stir in the hot sauce. Toss the fried chicken strips in this buffalo sauce until evenly coated.
