  1. 1. Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.
  2. 2. In a small bowl, combine the softened butter, chopped parsley, minced garlic, lemon juice, and a pinch of salt. Mix thoroughly, then transfer the mixture to a small piece of cling film. Roll it into a log shape, twist the ends, and refrigerate until firm.
  3. 3. Pat the steaks dry with paper towels and season generously with salt and freshly ground black pepper on both sides.
  4. 4. Heat a large heavy-bottomed frying pan or cast-iron skillet over medium-high heat for 2-3 minutes until hot.
  5. 5. Add the olive oil to the pan, followed by the steaks. Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust cooking time based on your preferred doneness. Use a meat thermometer to check the internal temperature: 52°C for rare, 57°C for medium-rare, 63°C for medium, and 71°C for well-done.
