Instructions
- 1. Bring a large pot of salted water to a boil and cook the rigatoni according to the package instructions until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
- 2. While the pasta cooks, heat a large skillet over medium heat. Add the diced bacon and cook for 6-8 minutes, stirring occasionally, until it is crispy and the fat has rendered. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.
- 3. Lower the heat to medium-low and add the minced garlic and chili flakes to the skillet. Cook for 1 minute, stirring constantly, until fragrant but not browned.
- 4. In a small bowl, whisk together the miso paste, soy sauce, and 2 tablespoons of reserved pasta water until smooth. Add this mixture to the skillet and stir to combine.
- 5. Pour in the double cream and increase the heat to medium. Simmer the sauce gently for 3-4 minutes, stirring frequently, until it thickens slightly.
- 6. Add the cooked rigatoni to the skillet along with the crispy bacon. Toss everything together to coat the pasta evenly in the sauce. If the sauce is too thick, add more reserved pasta water, a little at a time, until the desired consistency is reached.
- 7. Taste the pasta and adjust seasoning with salt and black pepper as needed. Remove from heat and stir in the grated Parmesan cheese.
- 8. Serve the Spicy Miso Bacon Rigatoni immediately, garnished with chopped spring onions and an optional sprinkle of extra Parmesan cheese.
