Instructions
- 1. Preheat your oven to 200°C (180°C fan/gas mark 6). Line a baking tray with parchment paper and set aside.
- 2. Finely chop the mushrooms or pulse them in a food processor until minced. In a large bowl, combine the minced beef, mushrooms, breadcrumbs, egg, minced garlic, grated ginger, soy sauce, sesame oil, and spring onions. Mix until fully combined.
- 3. Form the mixture into small meatballs (about 2 tablespoons each) and place them on the prepared baking tray. Bake in the preheated oven for 20 minutes, turning halfway through for even browning.
- 4. While the meatballs are cooking, prepare the soy glaze. In a small saucepan, whisk together soy sauce, honey, rice vinegar, cornstarch mixed with water, and a pinch of chili flakes. Heat over medium heat, stirring constantly, until the sauce thickens, about 5 minutes.
- 5. Remove the meatballs from the oven and transfer them to a large frying pan. Pour the soy glaze over the meatballs and cook on medium heat for 5 minutes, gently turning them to coat evenly in the sauce.
- 6. Serve the soy-glazed meatballs hot, garnished with sesame seeds and chopped fresh coriander. Pair with steamed jasmine rice or stir-fried vegetables for a complete meal.
