Instructions
- 1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and a pinch of salt. Cook for 6-8 minutes, stirring occasionally, until golden and caramelized. Remove from heat and set aside.
- 2. In a large mixing bowl, combine the ground beef, Worcestershire sauce, garlic powder, smoked paprika, black pepper, and salt. Mix gently with your hands until just combined—avoid overmixing to prevent tough burgers.
- 3. Divide the beef mixture into four equal portions and shape into patties slightly larger than your buns. Press a small indent in the middle of each patty with your thumb to prevent puffing during cooking.
- 4. Heat a large skillet or grill pan over medium-high heat and drizzle with 1 tablespoon of olive oil. Cook the patties for 4-5 minutes on the first side until browned. Flip and cook for another 3-4 minutes, then top each patty with a slice of Gouda cheese. Cover the pan with a lid and cook for 1-2 minutes until the cheese melts.
- 5. While the patties are cooking, toast the brioche buns in a clean, dry skillet or under a grill for 1-2 minutes until golden and slightly crispy.
- 6. Assemble the burgers by spreading a layer of mayonnaise on the bottom buns. Add a handful of mixed salad greens, then place the Gouda-topped patties on top.
