Instructions

  1. 1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms and a pinch of salt. Cook for 6-8 minutes, stirring occasionally, until golden and caramelized. Remove from heat and set aside.
  2. 2. In a large mixing bowl, combine the ground beef, Worcestershire sauce, garlic powder, smoked paprika, black pepper, and salt. Mix gently with your hands until just combined—avoid overmixing to prevent tough burgers.
  3. 3. Divide the beef mixture into four equal portions and shape into patties slightly larger than your buns. Press a small indent in the middle of each patty with your thumb to prevent puffing during cooking.
  4. 4. Heat a large skillet or grill pan over medium-high heat and drizzle with 1 tablespoon of olive oil. Cook the patties for 4-5 minutes on the first side until browned. Flip and cook for another 3-4 minutes, then top each patty with a slice of Gouda cheese. Cover the pan with a lid and cook for 1-2 minutes until the cheese melts.
  5. 5. While the patties are cooking, toast the brioche buns in a clean, dry skillet or under a grill for 1-2 minutes until golden and slightly crispy.
  6. 6. Assemble the burgers by spreading a layer of mayonnaise on the bottom buns. Add a handful of mixed salad greens, then place the Gouda-topped patties on top.
  7. 7. Spoon the caramelized mushrooms over each patty, then finish with the top bun. Serve immediately with your choice of sides, such as chips or a fresh salad.
