- 100 G Jumbo Garlic 100g
- 150G Mymoune Sugared Lemon Peel, 150G
- - Lurpak Unsalted Butter
- - Greenfields Black Peppercorns
- 250 Ml PLJ Lemon Juice Original Sharp 500ml
- 110G Gourmet Kitchen Himalayan Pink Salt Grinder
- 100 G Natco Paprika Powder
Instructions
- 1. Rinse the basmati rice under cold water until the water runs clear, then set it aside to drain.
- 2. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- 3. Add the rinsed rice to the saucepan and stir to coat it in the oil for about 1-2 minutes. Pour in the chicken stock and bring it to a boil.
- 4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- 5. While the rice cooks, season both sides of the tilapia fillets with salt, black pepper, and paprika.
- 6. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. When the oil is shimmering, add the tilapia fillets and cook for 3-4 minutes per side until golden brown and cooked through. Remove the fillets from the skillet and set aside on a plate.
- 7. In a small bowl, whisk together the lemon juice, lemon zest, and melted butter. Drizzle this over the cooked rice and fluff with a fork to combine.
- 8. Plate the rice on individual serving plates, top it with the seared tilapia fillets, and garnish with freshly chopped parsley and lemon wedges.
