Instructions

  1. 1. Prepare the batter by mixing 1 cup of all-purpose flour, 1/2 cup of rice flour, 1 tsp of baking powder, 1/2 tsp of salt, and 1 cup of cold water in a large bowl until smooth.
  2. 2. Cut 200g of firm tofu into 1-inch thick slices and pat them dry with a paper towel to remove excess moisture.
  3. 3. Heat cooking oil in a deep frying pan or pot to 180°C (350°F). Use enough oil to fully submerge the tofu pieces.
  4. 4. Dip each tofu slice into the batter, ensuring it is fully coated, then gently place it into the hot oil.
  5. 5. Fry the tofu slices for 3-4 minutes or until golden brown and crispy. Fry in batches to avoid overcrowding the pan.
  6. 6. Remove the fried tofu slices with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  7. 7. Prepare the dipping sauce by mixing 2 tbsp of dark soy sauce, 1 tbsp of rice vinegar, 1 tsp of sesame oil, 1 tsp of sugar, and 1/2 tsp of minced garlic in a small bowl.
  8. 8. Serve the crispy tofu immediately with the dipping sauce on the side.
