Instructions
- 1. Preheat a large skillet or frying pan over medium heat.
- 2. Wash and dice the red bell pepper, fresh onion, and fresh vine tomato into small pieces.
- 3. Mince the garlic.
- 4. Heat a tablespoon of olive oil in the skillet. Add the diced onion, garlic, and red bell pepper. Sauté for 3-4 minutes until softened.
- 5. Add the diced fresh vine tomato to the skillet and cook for another 2-3 minutes. Season with a pinch of salt to taste.
- 6. In a separate small pot, prepare the popping corn according to the package instructions. Once popped, set aside to cool.
- 7. Lay one tortilla flat on a clean surface. Place 1-2 slices of cheese on one half of the tortilla.
- 8. Spoon the sautéed vegetable mixture evenly over the cheese slices.
- 9. Fold the tortilla in half to cover the filling.
- 10. Place the folded tortilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese has melted.
- 11. Repeat steps 7-10 for the remaining tortillas and filling.
- 12. Serve the quesadillas warm, optionally garnished with the popped corn on the side for a crunchy snack.
