Instructions
- 1. Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature.
- 2. In a small bowl, combine the softened butter, chopped parsley, minced garlic, lemon juice, and a pinch of salt. Mix thoroughly, then transfer the mixture to a small piece of cling film. Roll it into a log shape, twist the ends, and refrigerate until firm.
- 3. Pat the steaks dry with paper towels and season generously with salt and freshly ground black pepper on both sides.
- 4. Heat a large heavy-bottomed frying pan or cast-iron skillet over medium-high heat for 2-3 minutes until hot.
- 5. Add the olive oil to the pan, followed by the steaks. Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust cooking time based on your preferred doneness. Use a meat thermometer to check the internal temperature: 52°C for rare, 57°C for medium-rare, 63°C for medium, and 71°C for well-done.
- 6. During the last minute of cooking, add the unsalted butter to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter for extra flavor.
- 7. Remove the steaks from the pan and transfer them to a plate. Cover loosely with foil and let them rest for 5 minutes to retain juices.
- 8. While the steaks rest, slice the chilled parsley butter into rounds.
- 9. Serve the steaks hot, each topped with a slice of parsley butter. Pair with your favorite sides, such as roasted potatoes or steamed vegetables, for a complete meal.
