Instructions
- 1. Heat a large, heavy-bottomed skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is hot, add the diced onion and minced garlic, sautéing for 2-3 minutes until fragrant and translucent.
- 2. Add the ground beef to the skillet. Use a wooden spoon to break it apart, and cook for 6-8 minutes until browned and fully cooked. Drain any excess fat from the pan, if needed.
- 3. Stir in the chili powder, ground cumin, smoked paprika, dried oregano, and a pinch of salt and black pepper. Cook for 1-2 minutes to toast the spices and enhance their flavor.
- 4. Lower the heat to medium-low and pour in the queso blanco. Stir until the cheese melts completely and combines with the beef, creating a creamy, flavorful mixture. This should take about 2-3 minutes.
- 5. Warm the soft taco tortillas in the microwave or on a dry skillet for 30 seconds to 1 minute until pliable.
