Instructions
- 1. Preheat your oven to 200°C (180°C fan) or gas mark 6.
- 2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook for 10 minutes, stirring occasionally, until they are soft and golden brown.
- 3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- 4. Stir in the sliced mushrooms, thyme, salt, and pepper. Cook for 8-10 minutes until the mushrooms release their moisture and become tender.
- 5. Deglaze the pan by stirring in the white wine. Cook for 2-3 minutes until most of the liquid has evaporated. Remove from heat and set the mixture aside.
- 6. Slice the baguettes lengthwise but not all the way through, creating a pocket. Scoop out some of the bread from the center to make room for the filling.
- 7. Fill each baguette with the mushroom mixture and top generously with grated Swiss cheese.
- 8. Place the stuffed baguettes on a baking tray lined with parchment paper. Bake in the preheated oven for 10 minutes, or until the cheese is melted and golden.
- 9. Remove from the oven, sprinkle with fresh parsley, and serve immediately while warm.
