Instructions

  1. 1. Preheat your oven to 200°C (180°C fan) or gas mark 6.
  2. 2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook for 10 minutes, stirring occasionally, until they are soft and golden brown.
  3. 3. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  4. 4. Stir in the sliced mushrooms, thyme, salt, and pepper. Cook for 8-10 minutes until the mushrooms release their moisture and become tender.
  5. 5. Deglaze the pan by stirring in the white wine. Cook for 2-3 minutes until most of the liquid has evaporated. Remove from heat and set the mixture aside.
  6. 6. Slice the baguettes lengthwise but not all the way through, creating a pocket. Scoop out some of the bread from the center to make room for the filling.
  7. 7. Fill each baguette with the mushroom mixture and top generously with grated Swiss cheese.
  8. 8. Place the stuffed baguettes on a baking tray lined with parchment paper. Bake in the preheated oven for 10 minutes, or until the cheese is melted and golden.
  9. 9. Remove from the oven, sprinkle with fresh parsley, and serve immediately while warm.
