  • 1 Kg Carrots - 1kg
  • 1 Piece Red Bell Pepper, 1pcs | Gopuff
  • - Knorr Stock Cubes Vegetable
  • 50G Pepper Black Ground BWFO
  • 1 Kg Red Onion 1kg
  • 1 Bunch Coriander - Bunch
  • 454G Yellow Millet, 454G
  • NaN Filippo Berio Classico Pure Olive Oil
  • 600G Picard-Organic Courgette Slices
  • 1 Kg Medium Couscous, 1Kg
  • - Mccormick Cumin Powder
  • 750 G Top-Op Table Salt Drums
  • 100G Rajah Spices Ground Paprika Powder

Instructions

  1. 1. Preheat the oven to 200°C (180°C fan).
  2. 2. Dice 1 courgette, 1 red bell pepper, and 1 red onion into 2cm pieces.
  3. 3. Peel and slice 1 large carrot into thin rounds.
  4. 4. Toss the diced vegetables in 2 tbsp olive oil, 1 tsp ground cumin, 1 tsp ground paprika powder, and a pinch of salt and black pepper.
  5. 5. Spread the vegetables evenly on a baking tray and roast in the oven for 25 minutes, turning halfway through.
  6. 6. While the vegetables roast, bring 300ml vegetable stock to a boil in a saucepan.
  7. 7. Add 150g yellow millet to the boiling stock, stir, then cover and remove from heat. Let it sit for 5 minutes.
  8. 8. Fluff the yellow millet with a fork and mix in 1 tbsp chopped fresh coriander.
  9. 9. Once the vegetables are roasted, combine them with the yellow millet in a large bowl.
  10. 10. Serve warm, garnished with additional coriander if desired.
