Instructions
- 1. In a small bowl, mix the olive oil, lemon juice, minced garlic, chopped thyme, rosemary, parsley, salt, and pepper to create a marinade.
- 2. Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them. Make sure the chicken is fully coated. Cover and let it sit for 10 minutes at room temperature while you prepare the onions.
- 3. Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the sliced onions and a pinch of salt, stirring occasionally. Cook for 15-20 minutes until the onions are golden and caramelized, then remove them from the pan and set aside.
- 4. In the same pan, add another tablespoon of olive oil and increase the heat to medium-high. Add the marinated chicken breasts and cook for 5-6 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the pan and let rest for 5 minutes before slicing thinly.
- 5. Lightly toast the bread slices or sandwich rolls under a grill or in a toaster for 2-3 minutes until golden and warm.
- 6. Assemble the sandwiches by spreading a thin layer of mayonnaise on one side of the bread. Layer with fresh spinach or rocket leaves, caramelized onions, and slices of the herby chicken. Top with the remaining bread slices.
- 7. Serve immediately, or wrap tightly in parchment paper for an on-the-go lunch.
