Instructions
- 1. Prepare the marinade by combining yogurt, minced garlic, lemon juice, olive oil, ground cumin, ground coriander, smoked paprika, turmeric, and salt in a large bowl.
- 2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 20 minutes (or up to 24 hours for maximum flavor).
- 3. While the chicken marinates, prepare the tahini sauce by mixing tahini, lemon juice, garlic, water, and salt in a small bowl until smooth. Adjust water to achieve your desired consistency. Set aside.
- 4. Heat a grill pan or skillet over medium heat. Cook the marinated chicken thighs for 6-8 minutes per side until fully cooked and slightly charred. Internal temperature should reach 74°C (165°F).
- 5. Remove the chicken from the pan and let it rest for 5 minutes. Then slice it into thin strips.
- 6. Assemble the wraps by spreading a generous layer of tahini sauce onto the flatbread. Add sliced chicken, shredded lettuce, diced tomatoes, sliced cucumbers, and pickled turnips. Optionally, drizzle with additional tahini sauce or a touch of hot sauce.
- 7. Wrap tightly and serve warm. For a crispier wrap, lightly toast the assembled wraps on a dry skillet for 1-2 minutes per side.
