Instructions

  1. 1. Bring a large pot of water to a boil, add the noodles, and cook according to package instructions (typically 4-5 minutes). Drain, rinse with cold water to stop cooking, drizzle with 1 tsp sesame oil, toss, and set aside.
  2. 2. Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat until shimmering. Add the ginger and garlic, stir-fry for 1 minute until aromatic.
  3. 3. Add the sliced carrot and bell pepper to the wok. Stir-fry for 3-4 minutes until slightly softened but still crisp.
  4. 4. Toss in the snow peas and scallions, and stir-fry for another 2 minutes until the snow peas are vibrant green and tender-crisp.
  5. 5. In a small bowl, whisk together soy sauce, dark soy sauce, hoisin sauce, rice vinegar, and honey. Pour the sauce into the wok and stir to coat the vegetables evenly.
  6. 6. Add the cooked noodles to the wok, tossing everything together for 2-3 minutes over medium heat until the noodles are heated through and well-coated in the sauce.
  7. 7. Remove the wok from the heat and drizzle with the remaining sesame oil. Sprinkle with toasted sesame seeds and optional red chili flakes for extra heat.
  8. 8. Serve immediately, dividing the stir-fry among bowls or plates. Garnish with fresh coriander leaves and a wedge of lime if desired.
