  • 250G Green Mexican Salsa, 250G

  • 10" Poco Loco Flour Tortillas, 10"
  • 100 G Trs Ground Cumin Jeera Powder
  • - La Chinata Sweet Smoked Paprika
  • - Jalpur Red Chilli Powder Fine

Instructions

  1. 1. In a medium bowl, mash the black beans slightly with a fork, leaving some beans whole for texture. Stir in the ground cumin, smoked paprika, chili powder, and a pinch of salt and pepper.
  2. 2. Heat 1 tablespoon of vegetable oil in a large non-stick pan over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.
  3. 3. Add the mashed black bean mixture to the pan and cook for 2-3 minutes, stirring occasionally, until heated through and well combined. Remove from heat.
  4. 4. Lay out the tortillas on a clean surface. Spread about 2-3 tablespoons of the black bean mixture evenly over half of each tortilla. Sprinkle a generous handful of grated cheddar cheese over the beans, followed by a small handful of chopped coriander.
  5. 5. Fold the tortillas in half to create a semi-circle shape, pressing down gently to seal.
  6. 6. Heat a clean, large non-stick pan or griddle over medium heat. Lightly grease with 1 teaspoon of vegetable oil. Place one or two folded tortillas in the pan (depending on the size of your pan) and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy and the cheese has melted.
  7. 7. Transfer the cooked quesadillas to a cutting board and repeat the process with the remaining tortillas, adding more oil to the pan as needed.
  8. 8. Slice each quesadilla into wedges and serve immediately with sour cream, salsa, and lime wedges on the side.
