Ingredients
- 50G Picard Chopped Flat Parsley
- 200G All Things Butter Unsalted Butter
- 500 Ml Dios Baco Pedro Ximenez Sherry, 500Ml
- 200 G Authentic Greek Yogurt
- 120G Rockfish Tinned Mount'S Bay Sardines Escabeche, 120G
- 1 Piece White Baguette French Baguette
- - McCormick Gourmet Organic Cayenne Pepper MCG-24431
Instructions
- 1. Place a double boiler or a heatproof bowl over a pot of simmering water.
- 2. Add 1 cup of light cream, 1 cup of greek yogurt, 1 1/2 tablespoons of butter, a pinch of cayenne pepper, and 1 tablespoon of chopped parsley to the bowl. Stir continuously until the mixture begins to thicken slightly, about 5 minutes.
- 3. Gently fold in 1 1/4 cups of drained, flaked sardines and continue to heat, stirring occasionally, until the sardines are warmed through, about 2-3 minutes. Do not let the mixture boil.
- 4. While the sardine mixture is heating, lightly toast 4 slices of baguette and spread with butter.
- 5. Spoon the creamy sardine mixture evenly over the buttered baguette slices.
- 6. Optionally, add a dash of sherry to the sardine mixture before serving for an extra layer of flavor.
- 7. Serve immediately, garnished with additional parsley if desired.
