  • 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
  • Pack Tray Of 30 Medium Free Range Eggs
  • 95 Ml Dr. Oetker Large Vanilla Extract
  • - Schwartz Ground Nutmeg
  • - Ceylon Cinnamon Quills BWFO
  • - Schwartz Whole Cloves
  • - Bart Allspice Ground 40g
  • 1 Kg White Granulated Sugar

Instructions

  1. 1. Pour 2 liters of British Whole Milk into a large saucepan and place it over medium heat.
  2. 2. Add 2-3 Ceylon Cinnamon Quills, 4-5 Schwartz Whole Cloves, and 1/2 teaspoon of Bart Allspice Ground to the milk. Stir gently and let the spices infuse as the milk heats up. Do not let the milk boil.
  3. 3. In a separate large mixing bowl, crack 8 Medium Free Range Eggs and whisk them thoroughly until the yolks and whites are fully combined.
  4. 4. Gradually add 200 grams of White Granulated Sugar to the eggs while whisking continuously until the mixture becomes pale and slightly thickened.
  5. 5. Once the milk is warm and infused with the spices, remove the saucepan from the heat. Slowly pour the warm milk into the egg and sugar mixture, whisking constantly to prevent the eggs from curdling.
  6. 6. Strain the mixture through a fine mesh sieve into a clean saucepan to remove the cinnamon quills, cloves, and any solid bits.
  7. 7. Return the strained mixture to low heat and cook gently, stirring constantly with a wooden spoon, until the custard thickens slightly and coats the back of the spoon. Do not let it boil.
  8. 8. Remove the saucepan from the heat and stir in 1/4 teaspoon of Schwartz Ground Nutmeg for added flavor.
