Instructions
- 1. Preheat your oven to 200°C (180°C fan) or gas mark 6 and line a baking tray with parchment paper.
- 2. In a large bowl, combine the minced chicken, grated onion, minced garlic, parsley, cumin, coriander, paprika, ground cinnamon, salt, and black pepper. Mix well until fully combined.
- 3. Shape the mixture into 12-14 small oval koftas, about the size of a golf ball, and place them on the prepared baking tray.
- 4. Drizzle the koftas with olive oil and bake in the preheated oven for 20 minutes, turning once halfway through, until golden and cooked through.
- 5. While the koftas cook, prepare the couscous: Place the couscous in a heatproof bowl. Bring the chicken stock to a boil, stir in the lemon zest and juice, and pour it over the couscous. Cover tightly and let it sit for 10 minutes.
- 6. Fluff the couscous with a fork, then stir in the chopped fresh parsley, olive oil, and a pinch of salt. Adjust seasoning to taste.
- 7. For the yogurt tahini sauce, whisk together the Greek yogurt, tahini, lemon juice, minced garlic, and a pinch of salt. Add a splash of water if needed to achieve a drizzling consistency.
- 8. To assemble, divide the couscous evenly among four bowls. Top with 3-4 koftas per bowl.
- 9. Drizzle the yogurt tahini sauce over the koftas and garnish with fresh parsley. Serve immediately and enjoy!
