Instructions

  1. 1. Preheat your oven to 200°C (180°C fan) or gas mark 6 and line a baking tray with parchment paper.
  2. 2. In a large bowl, combine the minced chicken, grated onion, minced garlic, parsley, cumin, coriander, paprika, ground cinnamon, salt, and black pepper. Mix well until fully combined.
  3. 3. Shape the mixture into 12-14 small oval koftas, about the size of a golf ball, and place them on the prepared baking tray.
  4. 4. Drizzle the koftas with olive oil and bake in the preheated oven for 20 minutes, turning once halfway through, until golden and cooked through.
  5. 5. While the koftas cook, prepare the couscous: Place the couscous in a heatproof bowl. Bring the chicken stock to a boil, stir in the lemon zest and juice, and pour it over the couscous. Cover tightly and let it sit for 10 minutes.
  6. 6. Fluff the couscous with a fork, then stir in the chopped fresh parsley, olive oil, and a pinch of salt. Adjust seasoning to taste.
  7. 7. For the yogurt tahini sauce, whisk together the Greek yogurt, tahini, lemon juice, minced garlic, and a pinch of salt. Add a splash of water if needed to achieve a drizzling consistency.
  8. 8. To assemble, divide the couscous evenly among four bowls. Top with 3-4 koftas per bowl.
  9. 9. Drizzle the yogurt tahini sauce over the koftas and garnish with fresh parsley. Serve immediately and enjoy!
