- 1. Heat a large skillet over medium heat and add 1 tablespoon of oil. Add the minced beef and cook for 8-10 minutes until browned, breaking it up with a wooden spoon.
- 2. While the beef cooks, finely dice the onion and garlic. Add them to the skillet with the beef and sauté for 3-4 minutes until softened and fragrant.
- 3. Stir in the taco seasoning and tomato purée. Cook for another 2 minutes, ensuring the beef is fully coated in the seasoning.
- 4. Pour in the beef stock and let the mixture simmer for 8-10 minutes until slightly thickened. Stir occasionally and set aside once done.
- 5. In a small saucepan over low heat, combine the grated cheddar cheese, cream, and diced green chilies. Stir continuously until the cheese is melted and the mixture is smooth, about 5 minutes. This is your queso sauce.
