Instructions

  1. 1. Rinse the lentils thoroughly under cold water and set aside to drain.
  2. 2. Heat olive oil in a large pot over medium heat. Add asafoetida and stir for 30 seconds to release its aroma.
  3. 3. Add the sliced leek, celery, and zucchini to the pot. Sauté for 5 minutes until they soften slightly.
  4. 4. Stir in the chopped tomatoes, thyme, marjoram, paprika, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  5. 5. Add the lentils and shredded cabbage to the pot. Pour in enough water to cover all the ingredients and bring to a boil.
