- medium Chilli Green Long
- 200 g Dahi
- 250 ml Lemon Juice Concentrate
- - Rice Flour
- 200 ml Mustard Oil
- 50 g Asafoetida Powder
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Wash and grate the zucchinis, then place them in a clean kitchen towel. Squeeze out excess moisture and transfer the grated zucchini to a mixing bowl.
- 2. Add chickpea flour, rice flour, finely chopped green chili, cumin seeds, asafoetida, turmeric powder, red chili powder, and salt to the bowl. Mix well to form a thick batter. No additional water should be needed as the zucchini provides sufficient moisture.
- 3. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Take small portions of the batter and flatten them into fritters. Cook for 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining batter, adding more oil as needed.
- 4. In a small bowl, combine plant-based yogurt, chopped mint leaves, lemon juice, and a pinch of salt. Mix well to create the mint yogurt dip.
- 5. Serve the hot zucchini fritters with the mint yogurt dip on the side for a comforting and flavorful snack.
