Ingredients

  • 200 ml Mustard Oil
  • 500 g Onion
  • 50g Pav Bhaji Masala
  • 100 g Coriander Leaves
  • 500 g Capsicum Green
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Slice the idlis into quarters to create bite-sized pieces and set aside.
  2. 2. Heat oil in a tawa or large skillet on medium heat, add mustard seeds, and allow them to splutter. Add curry leaves and sauté for a few seconds until aromatic.
  3. 3. Add the chopped onion and sauté until translucent. Stir in the chopped capsicum and cook for 2-3 minutes until slightly softened.
  4. 4. Add the chopped tomato and cook until it turns soft and mushy. Sprinkle turmeric powder, red chili powder, garam masala, and pav bhaji masala. Mix well and cook the spices for 1-2 minutes.
  5. 5. Add the idli pieces to the pan and gently toss to coat them evenly with the masala. Cook for 2-3 minutes, stirring occasionally to ensure the idlis are well combined with the spices.
  6. 6. Finish with lemon juice and freshly chopped coriander leaves. Give a final toss to mix everything together.
  7. 7. Serve hot, garnished with additional coriander if desired.
