Ingredients

  • 500 g Urad Dal
  • 250 g Carrot
  • 500 g Capsicum Green
  • 500 g Onion
  • 100 g Coriander Leaves
  • medium Chilli Green Long
  • 200 ml Sesame Oil
  • 200 g Fenugreek Seeds
  • 1 kg Idli Rice
  • 100 g Jeera
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Wash and soak the idli rice, urad dal, and fenugreek seeds together in water for 5-6 hours, then drain.
  2. 2. Grind the soaked mixture into a smooth batter using minimal water. Cover and ferment the batter overnight or for 8-10 hours in a warm place.
  3. 3. Once fermented, add salt to the batter and mix well. In a small pan, heat 1/2 tsp oil and temper mustard seeds, cumin seeds, and chopped green chilies. Add this tempering to the batter.
  4. 4. Stir in the grated carrot, chopped capsicum, onions, and turmeric powder into the batter, ensuring even distribution of vegetables.
  5. 5. Heat an appe pan on medium heat and lightly grease the cavities with oil. Pour spoonfuls of the batter into each cavity.
  6. 6. Cover and cook for 2-3 minutes until the bottom turns golden brown. Flip the appe and cook the other side until golden and fully cooked.
  7. 7. Remove the appe from the pan and repeat the process with the remaining batter. Serve hot with coconut chutney or sambar.
