Ingredients
- 500 g Urad Dal
- 250 g Carrot
- 500 g Capsicum Green
- 500 g Onion
- 100 g Coriander Leaves
- medium Chilli Green Long
- 200 ml Sesame Oil
- 200 g Fenugreek Seeds
- 1 kg Idli Rice
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Wash and soak the idli rice, urad dal, and fenugreek seeds together in water for 5-6 hours, then drain.
- 2. Grind the soaked mixture into a smooth batter using minimal water. Cover and ferment the batter overnight or for 8-10 hours in a warm place.
- 3. Once fermented, add salt to the batter and mix well. In a small pan, heat 1/2 tsp oil and temper mustard seeds, cumin seeds, and chopped green chilies. Add this tempering to the batter.
- 4. Stir in the grated carrot, chopped capsicum, onions, and turmeric powder into the batter, ensuring even distribution of vegetables.
- 5. Heat an appe pan on medium heat and lightly grease the cavities with oil. Pour spoonfuls of the batter into each cavity.
- 6. Cover and cook for 2-3 minutes until the bottom turns golden brown. Flip the appe and cook the other side until golden and fully cooked.
- 7. Remove the appe from the pan and repeat the process with the remaining batter. Serve hot with coconut chutney or sambar.
