Ingredients

  • 500 g Rava
  • 500 g Tomato - Hybrid
  • 500 g Onion
  • loose Ginger
  • 200 ml Ghee
  • 250 ml Lemon Juice Concentrate
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Dry roast the semolina in a pan over medium heat until lightly golden and fragrant, then set aside.
  2. 2. Heat ghee or oil in a pan, add mustard seeds and cumin seeds, and let them splutter.
  3. 3. Add curry leaves, green chilies, and grated ginger, sautéing for 1-2 minutes until aromatic.
  4. 4. Stir in the chopped onion and cook until translucent, then add the tomatoes and cook until softened.
  5. 5. Add turmeric powder, red chili powder, and salt, mixing well, and cook for another 1-2 minutes.
  6. 6. Pour in 3 cups of water and bring to a boil, then lower the heat to a simmer.
  7. 7. Gradually add the roasted semolina while stirring continuously to prevent lumps from forming.
  8. 8. Continue cooking on low heat, stirring occasionally, until the mixture thickens and the semolina is fully cooked.
  9. 9. Turn off the heat, add lemon juice and chopped coriander leaves, and mix well.
  10. 10. Serve hot, garnished with additional coriander leaves if desired.
